Oats Tikkis and Fire roasted red pepper sauce

You know its Diwali time when your facebook and blogger feed gets flooded with various sweets and snacks recipe. So much so that you need to kick your lazy self and get something going in the kitchen. I had no intention to make anything this year. The aggravated work pressure doesnot allow me any free time to even think and plan anything for this blog. I keep telling myself things will change soon but I keep struggling to fit in all thats needed to be done in the 24 hours frame.

These Oats tikkis are the ones that we prepared during our Saffola Fit Foodie, food truck event in New Delhi. We called it Dastan-e-kebab and served it with a roasted rd pepper and garlic sauce. The recipe that Chef Shipra Khanna created was an instant hot and we sold huge amount of them. While recipe tasting prior to the event we were little sceptical about the outcome but the kick ass sauce that we created in the process complemented the tikkis so well that the tikkis were flying off the pan from the very beginning.

So thought of why not share this recipe with my readers. So here they are, melt in your mouth oats tikkis with a spicy, peppery sauce. The best part is it's healthy and quick and you can make and freeze them to use anytime. I often make and store them for my kiddo's lunch box.

Oats Tikki and Fire roasted red pepper sauce

Ingredients:
Saffola Masala Oats (Italian flavour): 4 packets
Potato: 3 medium boiled
Onion: 1 medium
Coriander leaves: handful
Chat masala: 1 tsp

Take 3/4 cup water in a pan and add the contents of the masala oats. Mix and cook on low heat. within a minute it will thicken. The mixture should be tight but not dry. see the picture. Let it cool for some time.
In the mean time chop the onion and coriander very finely.
Once the oats is cold mix everything together except the oil. Taste and adjust the seasoning. It should be balanced taste of spicy-sweet and little sour. Once you are happy grease your hands and a plate. Take spoonfull of this mixture and roll between your palms. slightly press and smoothen the side. Place them on the plate. Repeat.

Heat little oil in a non stick pan and roast the tikkis on low flame. It should take 2-3 minutes for them to develop and crust. Cook on both sides and serve hot with the sauce.

Fire roasted red pepper sauce
