Cheese Stuffed Chicken Nuggets


All mothers with a school going kid must have a secret stash of food. Food that serve as quick snack for those 'any time' hunger pangs. Or for those sudden moments when you need something to boost their moods. It also is the best medicine to soothe a pain. And is just perfect to bribe them to do their chores or use as an incentive. so its always wise to have something hidden, out of the sight and reach of your kids.

Being  a mother of a young active boy I have no resort but to maintain such stash. especially the vacation keeps me on my toes all the time. After his studies its his snack time so is after cleaning his room, after craft work, during TV time, after he finishes his nap or once he is done with playing outdoor. Now I dont like packaged food products and with sonny boy's various allergies I prefer to make them home and this nuggets recipe is all time favourite. Its easy to make, great to freeze and easiest to serve by just baking or frying and with a dollop of ketchup.

Between the stash items keep changing depending on his preferences. Apart from this I also rely on some choco chip cookies, Lavash crackers, Tortilla bread that can be fried and turned into super yum tortilla chips with some dips, some parathas, fresh fruits, homemade yogurt and at least 2 type of cheese.

Here is the quick recipe.

Cheese stuffed Chicken nuggets

Ingredients:
Minced chicken/  keema: 1 cup (250 gms)
Garlic powder: 1 tsp (plz see notes)
Onion powder: 1 tsp (available at spencer's or any other good food store)
Italian seasoning: 1 tsp
Pepper powder: 1/2 tsp (optional)
Stock cube or seasoning: 2
Cheese cubes: 2
salt

All purpose flour: 2 tbsp
egg: 1 small
Bread crumb: 1/2 cup

Method:
Mix all the ingredients given in the first column Except the cheese cubes. Add the salt at the end as any stock cube is high on sodium. 

Grate the processed cheese very thinly.

Spread the bread crumb and all purpose flour in two shallow plates. Mix a inch of salt and pepper to the crumb.

Beat the egg and keep aside.

Divide the mince mixture in 18-20 portions and roll them between wet palms. With your finger make a dent in the center and fill with a fat pinch of shredded cheese. Close by pinching the sides and roll between your palms to make it smooth. Give it little elongated shape or any shape you prefer. Repeat with the rest of the mixture.

Now roll the nuggets in the flour, dip in egg and finally cover them with the crumb mixture. Make sure to crumb coat them very well. Secure the crumb on the nuggets by pressing them with your fingers.

Place in a flat Freezer safe container in single layer. Cover with two layers of butter paper and place another layer if need be. Cover and freeze.

Stays well for 15 days.

No need to thaw. Whenever you need to fry them heat enough oil and deep fry them straight from the freezer.

Always keep the flame on medium while frying them or you will end up with burnt nuggets with uncooked center. If the flame is too low the nuggets will soak excessive oil. The key is to heat the oil till smoking and then turn down the heat to medium.

Serve immediately with ketchup or any other sauce.

I prefer to serve it with some salad to balance out the meal.


And yes those french fries are homemade too :-)
